Cucumber Salad

The sesame oil is the star of this dish, so use it wisely. Pair this cucumber salad with dishes that pair with that flavor. I would start with half the suggested sesame seed oil and rice wine vinegar and add additional for your taste preference.

Serves: 4 | Serving Size: 1/4 of salad

Ingredients:

  • 2 English cucumbers, sliced into 1/4 inch rounds
  • 1 cup julienne carrots
  • 1 cup julienne radishes
  • 1 Tbs. thinly sliced scallions
  • 1 Tbs. chopped cilantro
  • 1.5 Tbs. sesame oil
  • 1 Tbs. rice wine vinegar
  • 1 tsp. lime juice
  • 1 tsp. toasted sesame seeds

Directions:

  1. Combine all ingredients and let marinate in refrigerator for at least 1 hour before serving.
  2. Refrigerate any leftovers.
