Cucumber Salad
The sesame oil is the star of this dish, so use it wisely. Pair this cucumber salad with dishes that pair with that flavor. I would start with half the suggested sesame seed oil and rice wine vinegar and add additional for your taste preference.

Ingredients:
- 2 English cucumbers, sliced into 1/4 inch rounds
- 1 cup julienne carrots
- 1 cup julienne radishes
- 1 Tbs. thinly sliced scallions
- 1 Tbs. chopped cilantro
- 1.5 Tbs. sesame oil
- 1 Tbs. rice wine vinegar
- 1 tsp. lime juice
- 1 tsp. toasted sesame seeds
Directions:
- Combine all ingredients and let marinate in refrigerator for at least 1 hour before serving.
- Refrigerate any leftovers.
