Homemade Mayo

It only takes a few minutes of whipping to have your very own simple homemade mayo. Enjoy!

Ingredients

  • 1 pasteurized egg yolk
  • 1 teaspoon mustard
  • 1 lemon – juiced
  • 3/4 cup oil
  • salt to taste

Directions:

  1. Place 1 pasteurized egg yolk in small mixing bowl and beat until it lightens in color, about 1 minute.
  2. Add in 1 teaspoon mustard and 1 teaspoon lemon juice to whipped. While whisking to blend ingredients, slowly add 6 tablespoons oil in a very slow stream until well combined.
  3. Mix in 1 tablespoon more lemon juice. While whisking to combine, slowly add 6 more tablespoons oil in a very slow stream.
  4. Season, to taste, additional lemon juice and salt.
    Refrigerate any leftovers.

Optional Add-ins:

  • Roasted Garlic
  • Roasted Red Pepper + Fresh Thyme
  • Hot Wing Sauce or Tapatío hot sauce
  • Za’atar + Fresh Lemon Juice
  • Chopped Chipotle Peppers + Adobo Sauce
