Homemade Mayo
It only takes a few minutes of whipping to have your very own simple homemade mayo. Enjoy!
Ingredients
- 1 pasteurized egg yolk
- 1 teaspoon mustard
- 1 lemon – juiced
- 3/4 cup oil
- salt to taste
Directions:
- Place 1 pasteurized egg yolk in small mixing bowl and beat until it lightens in color, about 1 minute.
- Add in 1 teaspoon mustard and 1 teaspoon lemon juice to whipped. While whisking to blend ingredients, slowly add 6 tablespoons oil in a very slow stream until well combined.
- Mix in 1 tablespoon more lemon juice. While whisking to combine, slowly add 6 more tablespoons oil in a very slow stream.
- Season, to taste, additional lemon juice and salt.
Refrigerate any leftovers.

- Roasted Garlic
- Roasted Red Pepper + Fresh Thyme
- Hot Wing Sauce or Tapatío hot sauce
- Za’atar + Fresh Lemon Juice
- Chopped Chipotle Peppers + Adobo Sauce
