Maple Glazed Pork Chops

This recipe is SO simple (look at how few ingredients there are) and incredibly fast (only 3 steps!). This is a go-to recipe for me when I am looking for something fast, flavorful and light. Because the micronutrients are almost non-existent in this dish, it’s great to pair with a colorful salad or a variety of steamed vegetables. Enjoy!

Serves: 2 | Serving Size: 1/2 of dish

Ingredients:

  • 2 (6 – 8oz) boneless pork chops, 3/4 to 1 inch thick
  • salt and pepper
  • 1 teaspoon olive oil
  • 3 tablespoons maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 1/2 teaspoons Dijon mustard
  • 1/2 teaspoon minced fresh thyme

Directions:

  1. Pat chops dry with paper towel and season with salt and pepper.
  2. Heat oil in 12-inch skillet over medium-high heat until just smoking. Lay chops in skillet and cook until well browned on first side, about 3 minutes. Flip chops, reduce heat to medium and continue to cook until meat registers 145 degrees, 5 to 10 minutes. Transfer to plate and tent loosely with aluminum foil.
  3. Meanwhile, whisk maple syrup, vinegar, mustard and thyme together in bowl. Add mixture to now empty skillet, scraping up any browned bits. Bring to simmer over medium heat and cook until thick and syrupy; about 2 to 4 minutes. Return browned chops and any accumulated juices to skillet and simmer; flipping chops frequently until coated in glaze, 1 to 2 minutes. Serve and enjoy!
