Truth time, I have never made a burger from ground beef. I always buy the Kirkland Frozen sirloin patties, I figured if I wanted a fancy burger I would go out. But, since we are unable to do that currently, it was time to bring the fancy burger to me, and I went BIG (hence the 1/2 pound patty). I adopted this recipe from my go-to cook book and am IN LOVE with it! The burger was sooo juicy and the sauce was a perfect flavor punch. I did use lean ground beef (93/7) for this recipe and it was a great choice, burger stayed together perfectly. Enjoy!

Ingredients:
For the Patty:
- 1 pound ground Angus beef
- 1 tablespoon unsalted butter – melted
- salt and pepper
For the Sauce:
- 1/4 cup mayo
- 2 teaspoon soy sauce
- 2 teaspoon minced fresh chives
- 1 teaspoon packed brown sugar
- 1 teaspoon Worcestershire sauce
- 1 small garlic minced
- 1/4 teaspoon pepper
For the Final Product:
- 4 slices hickory smoked bacon
- romaine lettuce
- 2 Brioche buns
Directions:
- Add ground beef, butter and pepper to a mixing bowl, combine well without over mixing. Divide meat into 2 lightly packed balls and season with salt and pepper on all sides.
- Adjust oven rack to middle position, preheat to 325*F.
- Lay bacon on a cold cast iron skillet and cook over medium/low heat on stove top until desired crispiness.
- Once bacon is done, place on a paper towel lined plate and set aside. Remove excess bacon grease from cast iron (do not wipe clean). Add patties and flatten each ball down to desired thickness. Cook initially on stove top on high heat for 3 to 4 minutes without moving them. Flip burger and cook for an additional 3 to 4 minutes. Place skillet in oven and cook until meat registers 160 degrees (for medium – cook longer if desired). Once desired temperate is reach, place burger patties on plate and let rest 3 minutes.
- To make sauce, whisk all sauce ingredients together in a bowl.
- Serve sauce on buns, top burgers with lettuce and bacon, enjoy!
