Crock Pot Baked Potatoes

This is a great way to add baked potatoes to any recipe. Using the crock pot will save you baking time while still maintaining the classic baked potato flavor and texture. Potatoes are an excellent source of vitamin C, Vitamin B6 and potassium (more than a banana!). They are also fat-free, cholesterol free and gluten free! So add this recipe as a side to your next chicken dish 🙂 Enjoy!

Serves: 1 |  Serving Size: 1 potato
Cook on low 7+ hours

Ingredients:

  • 1 russet potato or a potato type of your choice
  • Olive oil
  • salt and pepper
  • Optional: additional spices/herbs, baked potato toppings.

Directions:

  1. Wash and dry potato well. Pierce potato several times with a fork.
  2. Drizzle olive oil over potato, rub over potato skin evenly.
  3. Rub salt and ground pepper evenly over olive oil coated potato skin. Optional: add any additional seasoning/spices.
  4. Wrap potato in aluminum foil and place in crock pot. (You can add as many potatoes as desired as long as crock pot gets filled no less than 3/4 the way full and no additional time should be needed).
  5. Turn crock pot on low and cook for 7+ hours. If you are low on time, cook on high for one to two hours, then cook on low for the remaining time.
  6. When done, carefully remove potato from crock pot and foil. Add any toppings you desire. Enjoy!
