I had a client mention this dish to me at her Friday’s session and I thought it sounded so good and simple that I made it that night. And it did not disappoint. This dish is packed with delicious flavor and is so easy to make. The prep time is only about 5 minutes. I added a little extra baking time to allow the air fryer to warm up with the chicken in it. I paired this dish with a big helping of steamed vegetables. This will definitely be a make-again dish!
Serves: 2 | Serving Size: 1 Chicken Breast
Ingredients:
- 12 ounces boneless, skinless chicken breast
- 1 cup panko rice crumbs ( I used Dynasty Japanese Style Bread Crumbs, Rice Panko)
- 1/2 cup grated Parmesan cheese
- 2 eggs, beaten
- Cooking spray
Directions:
- Beat eggs in shallow baking dish. Combine Parmesan cheese and breadcrumbs together in a second shallow dish.
- Cut chicken breasts into chicken tender sized pieces.
- Dip the chicken breasts in the egg mixture and then into the cheese breadcrumb mixture, coating well.
- Generously spray the air fryer basket with nonstick cooking spray.
- Place the coated chicken breasts in the air fryer – filling the air fryer no more than half way.
- Bake in air fryer at 360 degrees for 14 to 20 minutes or until internal temperature of chicken reaches 165 degrees. Flip chicken about half way through cooking time.
- Serve immediately, enjoy!
Update: When I made this recipe again I used Italian seasoned bread crumbs, and the flavor really popped!
