Grilled Caesar Salad

This salad is a perfect side to any summer dish. Grilling the lettuce gives it such a new depth of flavor, it’s addicting! I also enjoy grilling bread for homemade croutons to go in. Once you try your salad this way, a cold Caesar will never be the same. Enjoy!

Serves: 4 | Serving Size: 1/2 a lettuce head

Ingredients:

  • 2 romaine lettuce heads
  • olive oil
  • salt & pepper
  • 2 lemons
  • 2 tablespoons sugar on small plate
  • butter
  • 2 -4 slices of bread
  • Caesar dressing

Directions:

  1. Cut lettuce head in half vertically. Carefully wash and lay open side down on paper towels to dry. Once fairly dry, lightly coat lettuce head (both sides) with oil. Cut side up, season with salt and pepper to taste.
  2. Wash and cut lemon in half. Lightly dip cut half of in sugar. Set aside.
  3. Lightly butter both sides of bread.
  4. Add lemon, cut side down to grill. Grill lettuce open side down, about 5 minutes (until ends of lettuce begin to wilt). Flip over, grill an additional 3 to 5 minutes.
  5. Add bread and grill to desired crispy amount on both sides. Tear into bite size pieces.
  6. Serve lettuce, open side up. Squeeze lemon juice, add dressing and desired amount of croutons. Enjoy!
