Pork Tenderloin Sandwich

This sandwich is hardy and delicious! It does have some prep and hands-on work, so give yourself about an hour from start to finish to prepare it, but it is worth your hour. There are a lot of ways to mix this up, let me know how you make it your own! This is a great stand alone dish, it will fill you up and not make you feel like your missing out on anything. However, a side we do enjoy with it is sweet potato French fries! Enjoy!

Serves: 4 | Serving Size: 1 sandwich

Ingredients:

  • 2 pounds pork tenderloin
  • 6 tablespoons olive oil
  • salt & pepper for seasoning
  • 2 teaspoon dried rosemary cracked needles or 1 teaspoon ground/powdered OR 1.5 tablespoon minced fresh
  • 1 tablespoon fennel
  • 1 pound broccolini – trimmed & cut into 2 inch pieces
  • 4 rounded teaspoons of garlic
  • 1.5 teaspoons red pepper flakes
  • 3 red bell peppers – julienned
  • 4 French rolls
  • 6 slices of provolone cheese
  • 2+ tablespoons red wine vinegar

Directions:

  1. Heat oven to 450*F
  2. Pat pork tenderloin dry with paper towels, then rub evenly with 2 tablespoons olive oil and season generously with salt & pepper, and rosemary and fennel. Place on one side of baking sheet and cook for about 10 minutes
  3. While pork cooks, mix broccolini, 2 tablespoons olive oil, garlic and red pepper flakes together.
    In a separate bowl, mix bell peppers with 1 tablespoon olive oil and salt & pepper to season.
  4. When pork is finished, remove from oven, flip over and add broccolini to opposite end & peppers to middle of baking sheet. Continue to cook until pork registers 145*F and vegetables are tender, about 20 minutes.
  5. Remove from oven and tent pork in aluminum foil pouch to rest – 5 minutes. Transfer veggies to plate and tent to keep warm.
  6. On cleaned baking sheet, place split rolls, topped with cheese and bake until bread is toasted and cheese is melted, about 5 minutes.
  7. Combine 1 tablespoon olive oil with red wine vinegar in large mixing bowl. Slice pork thin and add to oil/vinegar mixture.
  8. To make sandwich, stack broccolini, peppers and pork on toasted rolls. Cut sandwich and enjoy!
