This kind of dish is completely outside of my normal food choices, but that’s exactly why I had to make it. It reminds me of going to Leavenworth, WA. Next time Oktoberfest comes around, this will be on my menu. I have never been a sauerkraut person, but I LOVED it in this dish! The secret is to squeeze as much juice out of it as possible before adding it to the skillet. The Whole Grain Mustard is also a MUST have side to this dish. Nutrition bonuses: big portion, low calorie, but packed with potassium, vitamin C and iron. Enjoy!
Serves: 2 | Serving Size: 1/2 of dish
Ingredients:
- 3 whole cloves
- 2 whole allspice
- 2 bay leafs – crumbled
- 1/2 teaspoon salt
- 1/2 cup dry white wine
- 1/2 cup low sodium chicken broth
- 1 tablespoon olive oil
- 2 slices of bacon – diced
- 1 yellow onion, thinly sliced
- 2 small apples – one tart & 1 sweet – cut into 1/2 inch pieces
- 2 small Yukon gold potatoes – cut into 1/2 inch pieces
- 12oz beef kielbasa cut into 2 inch pieces
- 1 pound sauerkraut – drained and squeezed dry
- pepper
- Optional for serving:
- minced fresh parsley
- whole grain mustard
- horseradish
Directions:
- Make spice mixture by combining first 6 ingredients in a bowl. Set aside.
- Heat oil in a 12 inch skillet over medium-high. Add bacon pieces, cook until crispy. Add onion, apple and potatoes, sauté until onion is soft – about 5 to 8 minutes.
- Add kielbasa, spice mixture (from step 1), sauerkraut and ground pepper, stir to combine. Bring to a simmer, cover, reduce heat to low and cook until potatoes are soft, about 20 minutes.
- Serve hot with parsley on top and mustard and horseradish on the side. Enjoy!
