Smoker Honey Habanero Chicken

While I made this recipe using chicken breast on the smoker, any other chicken part could be used and you can adapt it for a different cooking method as desired. The flavor is a perfect blend of sweet and spicy. The smoker allows the chicken to cook slow and become extra tender. We paired this dish with corn on the cob and asparagus. Enjoy!

Serves: 2 | Serving Size: 1 chicken breast

Ingredients:

  • 2 – 6oz chicken breasts
  • Chicken seasoning of your choice
  • 1/2 cup honey
  • 1 teaspoon finely diced habanero pepper
  • 1/2 tablespoon of apple juice
  • 1/4 teaspoon salt
  • butter
  • 1/4 cup BBQ sauce of your choice
  • disposable 9×9 aluminum pan

Directions:

  1. Season chicken generously with your chicken seasoning and let refrigerate for one hour.
  2. Mix honey, habanero, apple juice and 1/4 teaspoon salt and set aside.
  3. Set Green Mountain Grill to 275*F, once temperate is met, add chicken to grill and smoke until chicken reaches an internal temperature of 160*F
  4. Once chicken is at temperature, butter the bottom of an aluminum pan, add chicken and cover with aluminum foil. Add pan to smoker cooking until chicken reaches an internal temperature of 180*F.
  5. Once at temperature, coat chicken generously with the melted butter on the bottom of the pan and BBQ sauce. Return foil cover over chicken and smoke for an additional 10 minutes.
  6. Heat honey glaze in microwave, apply generously to chicken and cook for an additional 5 minutes.
  7. Remove from heat, cool and enjoy!
