Sometimes you just need a good Reuben sandwich in your life, and this recipe is a great place to start. The Russian dressing is DELICIOUS, but can easily be adjusted to your liking. Be sure to buy quality rye bread, thick slices with a nice marble. This recipe pairs great with homemade sweet potato fries. Enjoy!

Ingredients:
- Rye Bread – 8 slices
- 4 tablespoons unsalted butter, softened
- 8 slices Swiss cheese
- 3/4 pound corned beef
- 1 pound sauerkraut – drained
- Russian Dressing:
- 1 1/2 tablespoon chili sauce
- 1/2 tablespoon freshly squeeze lemon juice
- 1 teaspoon creamy horseradish
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon paprika
- 1 tablespoon light sour cream
- 1 tablespoon sweet relish
- 1 garlic clove
- 1/4 cup light olive oil mayo
Directions:
- Russian Dressing:
- In a medium bowl, whisk together all ingredients until well combined. Season with salt and pepper to taste and refrigerate for at least 20 minutes.
- Butter one side of each slice of bread. On the non-butter side, spread Russian dressing evenly on each slice. Top dressing with cheese , corned beef, and sauerkraut – close sandwich, dressing side down.
- option: heat sauerkraut over medium-low heat in its own skillet to help remove excess juice. If choosing this option, cook sandwiches open and add sauerkraut before serving.
- Heat a large skillet over medium heat. Place two sandwiches at a time in skillet, and cook until golden and cheese is melted, about 3 to 4 minutes per side. Repeat with other two sandwiches. Serve immediately, enjoy!
