This dish is a must try! The flavors are unbelievable. It seems so simple, but with each bite you are more and more impressed with the flavor. Serve this dish with a side of brown rice. Add it to your menu one of these weeks, enjoy!
Ingredients:
- 1/4 cup olive oil + 3 tablespoons
- 6 garlic cloves
- 2 tablespoons Worcestershire sauce
- 1 lemon – for zest and juice
- 1 1/4 teaspoon salt – divided
- 1/2 teaspoon fresh ground pepper
- 2 pounds sirloin steak tips, cut into 1/2 inch pieces
- 4 – 6 bell peppers, seeded and cut into chunks
- 1 large sweet onion, cut into chunks
- 1 tablespoon fresh parsley – minced
- 1 tablespoon fresh oregano – minced
- 4 cups cooked brown rice
Directions:
- Make marinade by combining first 6 ingredients together in a zip lock bag. Place 2 tablespoons of marinade mixture in a small bowl and set aside. Add steak tips to zip-lock bag and toss to coat well. Remove as much air from zip lock as possible and refrigerate for up to 60 minutes, flipping half way through.
- Place empty 12-inch cast iron skillet on middle over rack and heat to 500*F. Meanwhile, remove steak from marinade and pat dry with paper towels.
- Once oven reaches 500 degrees, move skillet to stove top, add 2 tablespoons olive oil and heat over medium heat. Add steak tips to skillet, cook on all sides until beef registers 130 to 135 degrees, about 8 to 10 minutes. Transfer to plate and tent loosely with aluminum foil.
- In now empty cast iron, add 1 tablespoon oil, peppers, onion, 1/2 cup water and 1/4 teaspoon salt, cover and cook over medium low heat, stirring occasionally, until vegetables are softened, about 5 minutes. Uncover and continue to cook until water evaporates about 5 to 10 minutes. Remove skillet from stove top, stir in reserved marinade, parsley, oregano and any accumulated meat juices. Serve steak tips with vegetables and a cup of brown rice on the side. Enjoy!
