Berry Crisps

Yields: 2 servings

Ingredients:

  • For the Berry Filling:
    • 1 cup fresh strawberries, diced
    • 1/2 cup fresh blueberries
    • 2 teaspoons granulated sugar
    • 1/4 teaspoon cinnamon
    • 1/4 teaspoon vanilla extract
    • 2 teaspoons cornstarch
  • For the Topping:
    • 2 tablespoons whole wheat pastry flour
    • 2 tablespoons old fashioned oats
    • 2 tablespoons brown sugar
    • 1 tablespoons cold unsalted butter, cut into small pieces
    • pinch of salt

Directions:

  1. Preheat oven to 375 degrees and spray two 7 ounce ramekins with cooking spray and place them on a baking sheet.
  2. In a medium sized bowl combine the berries, granulated sugar, cinnamon, vanilla, and cornstarch. Gently mix berries until everything is combined and pour the mixture into the prepared ramekins.
  3. In a separate bowl whisk together the flour, oats, brown sugar, and salt.
  4. Cut in the cold butter with your hands until the mixture is coarse and crumbly. Divide the topping between the two ramekins.
  5. Place the crisps in the middle rack of the oven and bake for 20-25 minutes or until they are bubbly and golden brown on top.
  6. Remove from the oven and let them cool for 10 minutes before serving. The berry crisps are good on their own or can be served with a scoop of ice cream or whipped cream.

Notes: Fresh berries work best for this recipe. Frozen berries produce too much liquid when baked.
