Ingredients:
- For the Berry Filling:
- 1 cup fresh strawberries, diced
- 1/2 cup fresh blueberries
- 2 teaspoons granulated sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon vanilla extract
- 2 teaspoons cornstarch
- For the Topping:
- 2 tablespoons whole wheat pastry flour
- 2 tablespoons old fashioned oats
- 2 tablespoons brown sugar
- 1 tablespoons cold unsalted butter, cut into small pieces
- pinch of salt
Directions:
- Preheat oven to 375 degrees and spray two 7 ounce ramekins with cooking spray and place them on a baking sheet.
- In a medium sized bowl combine the berries, granulated sugar, cinnamon, vanilla, and cornstarch. Gently mix berries until everything is combined and pour the mixture into the prepared ramekins.
- In a separate bowl whisk together the flour, oats, brown sugar, and salt.
- Cut in the cold butter with your hands until the mixture is coarse and crumbly. Divide the topping between the two ramekins.
- Place the crisps in the middle rack of the oven and bake for 20-25 minutes or until they are bubbly and golden brown on top.
- Remove from the oven and let them cool for 10 minutes before serving. The berry crisps are good on their own or can be served with a scoop of ice cream or whipped cream.
Notes: Fresh berries work best for this recipe. Frozen berries produce too much liquid when baked.
