This recipe is a great way to bring in the warmer weather! Using beer as a braising liquid adds a yummy and unique kick of flavor to this classic sandwich. I was surprised how much the beer flavor came out in the meat. Be sure to pick a beer that you like, I used a stout in this recipe but you can also use a pilsner.
Serves: 5 | Serving Size: 1 pulled pork sandwich (5oz meat, 1.5 cup coleslaw, 1 bun)
Cook on low 7+ hours
Ingredients:
- 12oz Sweet Baby Rays BBQ Sauce (or one of your choice)
- 12oz Deschutes Obsidian Stout Beer (or beer of your choice)
- 1/4 cup Light Brown Sugar
- 1 tablespoon mustard
- 1 tablespoon soy sauce
- 1 sweet onion chopped
- 2 garlic cloves – minced
- 2 1/2 pounds pork tenderloin
- 4 potato hamburger buns
- 1 – package of dole creamy coleslaw kit
Directions:
- In crock pot whisk to combine first 7 ingredients.
- Add pork tenderloin. Cover and cook on low for 7+ hours (pork should reach internal temperature of 160 degrees)
- Transfer cooked pork to bowl and let cool, then shred into using 2 forks. Mix shredded work with sauce in crock pot.
- While pork is sitting in sauce, make up coleslaw.
- Add 5oz pork to half of hamburger bun, top with coleslaw and top with other half of bun, Enjoy!
Refrigerate any left overs.
