Smoker Honey Habanero Chicken

This recipe was made with chicken breast on our Green Mountain Smoker, but any other chicken part could be used and you can adapt it for a different cooking method as desired. The flavor is a perfect blend of sweet and spicy. The smoker allows the chicken to cook slow and become extra tender. We paired this dish with corn on the cob and asparagus. Enjoy!

Serves: 2 | Serving Size: 6oz of chicken

Ingredients:

  • 2 – 6oz chicken breasts
  • poultry seasoning of your choice
  • 1/2 cup honey
  • 1 tsp. finely diced habanero pepper
  • 1/2 tbsp. of apple juice
  • pinch of salt
  • butter
  • 1/4 cup BBQ sauce of your choice
  • disposable 9×9 aluminum pan

Directions:

  1. Sprinkle chicken generously with your choice of poultry rub and let refrigerate of one hour.
  2. prepare the honey glaze by mixing honey, habanero, apple juice and salt.
  3. Set grill to 275 degrees, once temperate is met, add chicken to grill and cook until internal temperate of meat reaches 160 degrees.
  4. Spread butter on bottom of a aluminum pan, add chicken to pan and cover with aluminum foil.
  5. Place chicken back on grill and cook until internal temperature of meat reaches 180 degrees. Then, glaze chicken generously with the melted butter on the bottom of the pan and BBQ sauce. Cover chicken back up and cook for an additional 10 minutes.
  6. Heat honey glaze on grill or in microwave, apply it to the chicken and cook for an additional 5 minutes.
  7. Remove from heat, cool and enjoy!
