Ingredients:
- 1 1/2 pounds boneless skinless chicken breast½ small onion, diced
- 3 garlic cloves, minced
- 8 ounce can crushed pineapple, slightly drained
- 2 tablespoons soy sauce
- 2 tablespoons coconut oil
- 1 lime, juiced
- ½ teaspoon ground ginger
- ¼ teaspoon red pepper flakes
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- Swiss chard leaves (or other leaf lettuce of choice)
- For the wrap: you can pick any fillings you want, but here are some suggestions:
- avocado slices
- shredded carrots
- shredded cabbage
- green onions
- sliced almonds
- fresh cilantro
Directions:
- Place chicken, onions and garlic in crock pot.
- In a small bowl, combine pineapple, soy sauce, coconut oil, lime juice, ground ginger, red pepper flakes, salt and pepper. Stir to mix, and then add to slow cooker.
- Cook on low for 4-6 hours. Remove cooked chicken from slow cooker and shred with two forks.
- Return chicken to slow cooker, mix all ingredients together, and set temperature to warm (or low) until ready to serve.
- Assemble Swiss chard wraps with desired ingredients.
