Crock Pot Hawaiian Chicken Wraps

Yields: 6 – Serving size: 1/6 of crock pot
Cook on low 4+ hours

Ingredients:

  • 1 1/2 pounds boneless skinless chicken breast½ small onion, diced
  • 3 garlic cloves, minced
  • 8 ounce can crushed pineapple, slightly drained
  • 2 tablespoons soy sauce
  • 2 tablespoons coconut oil
  • 1 lime, juiced
  • ½ teaspoon ground ginger
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • Swiss chard leaves (or other leaf lettuce of choice)
  • For the wrap: you can pick any fillings you want, but here are some suggestions:
    • avocado slices
    • shredded carrots
    • shredded cabbage
    • green onions
    • sliced almonds
    • fresh cilantro

Directions:

  1. In a small bowl, combine pineapple, soy sauce, coconut oil, lime juice, ground ginger, red pepper flakes, salt and pepper. Stir to mix, and then add to slow cooker.
  2. Cook on low for 4-6 hours. Remove cooked chicken from slow cooker and shred with two forks.
  3. Return chicken to slow cooker,  mix all ingredients together, and set temperature to warm (or low) until ready to serve.
  4. Assemble Swiss chard wraps with desired ingredients.
