Stuffed Pepper Soup

I was craving peppers , but not quite a Mexican dish like fajitas. So I hit the Googs to see what was suggested and found this Stuffed Pepper Soup. It has a nice mild flavor but is loaded with good for you nutrients. It makes A LOT, 8 servings, so plan on having meals for several days, whether it is for lunch or dinner. When I made this I was short on time so I made it on the stove top in my largest pan, next time I may try it in the crock pot if I am going to have a late night. Make the rice in a separate pan or rice maker, then serve the soup over your bowl of rice. Mix it all together, and its delicious!

Serves: 8 | Serving Size: 1/8 of soup

Cook time: Crock Pot: 4 hours to 8 hours; Stove top: 30+ minutes

Ingredients:

  • 2 teaspoons olive oil
  • 1 onion, diced
  • 3/4 cup celery, diced
  • 1/2 bag of baby-cut carrots, diced
  • 3–5 cloves garlic, minced
  • 1 pound ground beef (turkey may be substituted)
  • 1 large green, yellow, red and orange bell pepper, diced
  • 2 (15 ounce) cans fire-roasted diced tomatoes
  • 1 (15 ounce) can tomato sauce
  • 32 ounces beef broth (chicken or vegetable broth may be substituted)
  • 8 cups cooked brown rice (1 cup per serving)
  • 1 1/2 teaspoons salt
  • 1 teaspoon pepper

Directions:

  1. In a large skillet, heat the olive oil over medium heat.  Add the onions, celery, and carrots; saute until softened, about 4 minutes.
  2. Add garlic and ground turkey and saute until the turkey is browned. If needed, drain the fat from the skillet.
  3. Option if making it on stove top:
    1. Add the rest of the ingredients to skillet.  Stir well and bring to boil.
    2. Cover, reduce heat and let simmer for 30 minutes or more. Stir every so often.
  4. Option if making in crock pot:
    1. Add the turkey and vegetable mixture to the crock pot along with the rest of the ingredients.  Stir well and cook on high for 4 hours or on low for 8 hours.
  5. Add one cup of cooked brown rice to bowl, top with 1/8 of soup, enjoy!
