Slow Cooker Pulled Pork
I have made pulled pork plenty of times in the past, but something about this recipe is AMAZING!! It is literally the best tasting pulled pork I have ever had, I could eat it every day. It is important to find the same kind of meat the recipe calls for and to follow step four as it calls. Great summer recipe, have coleslaw and some fruit on the side. Enjoy!
Serves: 4 | Serving Size: 1/4 of meat with one potato hamburger bun
Cooking Time: 6 hours on low, 3-4 hours on high.
Ingredients:
- 1 cup low sodium chicken broth
- 4 slices of hickory smoked bacon
- 2 tablespoons packed brown sugar
- 2 tablespoons smoked paprika
- 3 teaspoons chili powder
- salt and pepper
- 2 pounds boneless country-style pork ribs
- 1 1/2 cups sweet baby rays BBQ sauce (or other BBQ sauce of choice)
- 4 potato hamburger buns
Directions:
- Add chicken broth and bacon strips to crock pot.
- Mix sugar, paprika, chili powder, 1/2 teaspoon salt and 1/2 teaspoon of pepper together in a bowl and rub evenly over ribs. Nestle ribs into slow cooker over bacon strips and cook pork until tender, 6 hours on low or 3 to 4 hours on high.
- Transfer cooked pork to bowl and let cool then shred into using 2 forks.
- Discard bacon. Strain cooking liquid into fat separator and let sit for 5 minutes; reserve 1 cup defatted liquid. Combine reserved liquid and BBQ sauce in separate bowl. Stir sauce into shredded pork; season with salt and pepper.
- Enjoy pork on a potato bun!
