Grilled Chicken Thighs

I have always chosen chicken breasts over thighs for any recipe. But, I had a friend give me this recipe (and say chicken thighs are a must), it seemed way too easy, so I figured, why not. All I can say is WOW(!!) I am in LOVE WITH IT!! I highly recommend this dish. We used the boneless, skinless frozen chicken thighs from Cost Co and paired it with mixed grilled vegetables, and it was all so good.

Serves: 2 – Serving Size: 2 chicken thighs

Ingredients:

  • 4 boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 1/2 tablespoon chicken seasoning of choice
  • lemon

Directions:

  1. Add 1/4 cup olive oil, 1/2 tablespoon (more if desired) chicken seasoning and the juice of one lemon to a large zip lock bag – combine well.
  2. Add chicken thighs to marinade mixture, let rest in fridge for at least one hour.
  3. Preheat grill to medium-high heat on one side. Add chicken pieces to unlit side of grill and cook, covered, until internal temperature reaches 165°F. Do not flip thighs.
  4. Let chicken rest up to 5 minutes before serving. Enjoy!
